Easy Sheet Pan Dinners for Busy Nights

Sheet pan dinners are one of my go-to meals, especially as a stay-at-home mom with three kids. Evenings can be hectic with sports, schoolwork, and endless activities, so I need simple and quick meals that don’t require a long list of ingredients or complicated steps.

That’s why I was so excited to find McCormick’s Sheet Pan Seasoning Packets! These pre-measured spice blends make cooking even easier because they contain almost everything you need in one simple packet. Today, I’m trying out two flavors:

Glazed Salmon with Veggies
Chicken Parmesan with Roasted Broccoli

Let’s get started!

Sheet Pan Glazed Salmon with Veggies

Ingredients:

  • 1 packet McCormick Glazed Salmon & Veggies seasoning
  • 2 tbsp brown sugar
  • ⅓ cup water
  • 4 salmon filets
  • 1 bag broccoli florets (or green beans/asparagus)
  • Cooking spray
  • Foil (for easy cleanup)

Instructions:

1️⃣ Prepare the Glaze – In a small bowl, mix the seasoning packet, brown sugar, and water until fully combined.

2️⃣ Line the Sheet Pan – Cover a baking sheet with foil and spray it with cooking spray to prevent sticking.

3️⃣ Arrange the Salmon & Broccoli – Place the salmon filets on the pan (I cut mine in half for smaller portions). Add broccoli florets around the salmon.

4️⃣ Brush on the Glaze – Use a brush to coat the salmon and broccoli with the glaze for a rich, caramelized flavor.

5️⃣ Bake – Place in a 375°F oven for 20 minutes until the salmon is flaky and the broccoli is tender.

Final Thoughts:

This meal was SO easy to make and tasted amazing! The sweet and savory glaze paired perfectly with the salmon, and my husband—who’s a big salmon fan—loved it. I served it with dinner rolls, and it was a healthy, well-balanced meal with minimal effort.

Sheet Pan Chicken Parmesan with Roasted Broccoli

Ingredients:

  • 1 packet McCormick Chicken Parmesan seasoning
  • 4 thinly sliced boneless chicken breasts
  • 2 tbsp olive oil
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 bag broccoli florets
  • Salt & pepper

Instructions:

1️⃣ Prep the Chicken – Brush each chicken breast with olive oil on both sides. Coat them with the seasoning mix and place them on a foil-lined sheet pan.

2️⃣ Prepare the Broccoli – In a bowl, toss broccoli with olive oil, salt, and pepper. Spread it onto the pan around the chicken.

3️⃣ Bake at 425°F – Cook for 10 minutes.

4️⃣ Add Sauce & Cheese – Remove from the oven and spoon marinara sauce onto each piece of chicken. Sprinkle shredded mozzarella on top.

5️⃣ Bake Again – Return to the oven for 5 more minutes, or until the cheese is melted and bubbly.

Final Thoughts:

This was SO delicious and easy to make! I love cheesy dishes, and this one was a hit. You could totally serve it over pasta, but we enjoyed it as-is with some cheesy garlic bread on the side.

Final Thoughts & Clean-Up

After making both of these meals, I can confidently say that I’ll 100% be making them again! They were quick, easy, and full of flavor—perfect for busy weeknights when you need something delicious but don’t have time to spend hours in the kitchen.
